Chocolate Chunk Oat Bars

If you ever invite me to an event and I can make it, I will always try to bring something. I love baking! I love creating something that others will enjoy. I’m always looking for constructive criticism so I can get better at what I love to do.

My good friend Jessie who is a certified Yoga instructor and Holistic Nutritionist has recently started teaching Yoga classes outside of her Goodlife schedule which is usually first thing in the morning (WIN! I can finally make it to her classes!) and to start off, she offered two free intro classes. Of course I attended both, and baked treats for both! For her first class I made my Black Bean Brownies, without the peanut butter. Everyone loved them and couldn’t believe there were beans in them!

I wanted to change things up for the second class, so I threw a bunch of ingredients together and it ended up being a hit!

Recipe is Gluten Free, Dairy Free and Refined Sugar Free
*Adding a cup of nut/seed butter would not be a bad idea for these, let me know if you try that out! ;)

2 cups Gluten Free Flour – I used Bob’s Red Mill brand, but oat flour will work great too
2 cups oats
1 tsp baking powder
1/2 tsp sea salt
1 tsp cinnamon
1/2 cup honey
1/2 cup brown sugar or coconut sugar
1 tsp vanilla extract
1 cup coconut oil
2 eggs
1 cup Enjoy Life chocolate chunks

Method

Preheat oven to 350.

Mix together flour, oats, baking powder, sea salt, and cinnamon.

In a separate bowl mix together honey, your choice of sugar, vanilla extract, coconut oil and eggs.

Combine wet and dry mixtures and mix well.

Fold in chocolate chunks.

Line or spray a baking dish. I used a 9×13 size baking dish for this.

I sprayed my dish with some non stick spray, but lining it with parchment paper will work a lot better.

Evenly spread mixture (and sprinkle some more chocolate chunks if desired ;)) into the baking dish and bake for 20 mins. Let cool completely (if you can) before cutting into bars. I found cutting it while it was still warm caused it to fall apart a bit.
